My first snow, my first weekend at Lake Tahoe


Growing up in a third world tropical loved asian country and had never seen any snow before would really excite you to see one for the first time. Well I got so excited! I know you would hate it if you have lived there all your life but in my case, it was introduced to me slowly. When we came here in the US, it was cold and I couldn't actually move so much but isn't actually snowing, which is good, atleast we were not freakin freezing so we had a good start and made us hunger to see a snow for more.. lol.


It was one saturday chilly morning when we started driving from Nevada to Lake Tahoe. We were like going in circles until we reach at some point a little far away mountains covered with snow. In amazement, I said WOW to myself, I still couldn't believe my eyes that it is snow, that I am actually here, seeing a snow from a far while my hubby is driving, I was so grateful to God that I am married to the man that I really love and that I am with him at this moment with our daughter. Just can't explain how happy I am to have them both and to see a snow I've been longing for. I may have made some mistakes before but I trusted and love God so much that I immediately knew He would take care of us, as always, and that I would be married to the man of my dreams and be with him forever. I was and will always be thankful for all the things that I had and went through and for everything. I feel like I have everything now and I'm so happy. So blessed everyday.

To the very person who is reading this today, I just want to share with you that I realized that our lives may not be so perfect. HAPPINESS, tears, loneliness, loss, EXCITEMENT. Sometimes we blame it on our parents that brought us up but we should understand also that's how they were raised too and sadness with your mom's face and yet she couldn't do anything anymore and did not change her at all until she got older and older. We should stop the cycle and be in charge of our own beautiful lives. No pointing fingers at anyone. We are responsible for our acts and ourselves, we are the only ones who can make us happy. Stop regretting about the past, worrying about the future, just be happy and be glad today and everyday.

We had so much fun while we were on Lake Tahoe. We sled on a junior mountains and rode a snow mobile. It's my first time, all of it!.




Reminds me of my favorite season, Christmas!


We stayed at Marriot hotel and it was so warm and beautiful. Thank you God.

Grilled Pork Liempo recipe (Grilled pork belly)

I don't know how to begin to describe the taste of Grilled Pork Liempo. Especially when you add grilled eggplant salad, egg, any light dish on the side that would compliment the taste and it's vinegar sauce where in you could add garlic and pepper in addition to that. Just a thought, but you could actually eat it alone with just the vinegar sauce and hot rice.. some eat it with ketchup.. yum!

Everyday I try to reinvent dishes that hopefully will satisfy my family. Of course I can't pressure them to like all the healthy foods that I like to eat but I try for sure to serve them meals that are as much as possible no chemicals and if not, less preservatives. I try to serve in our every meal some peeled ripe fruits on the table. 
In this meal, I used organic egg, apple cider vinegar, no oil and used kikkoman soy sauce to marinade. But you can actually used the regular ones. It's just me. 

Ingredients:

  • 5 pcs. Pork belly (2lbs)
  • 3 tsp
  • 2 lbs pork belly
  • 1/2 cup soy sauce
  • 1 piece lemon (or 3 to 4 pieces calamansi)
  • 1/2 tsp ground black pepper
  • 1 tsp salt
  • 6 cloves garlic, crushed
Sauce:
1/4 cup apple cider vinegar, you may use regular vinegar
1 tsp. of onions
2 garlic cloves, crush
salt and pepper to taste
pinch of sugar
or 
Toyomansi




Cooking Procedure

 1.  Defrost and Thaw pork belly in the refrigerator or in the microwave.

    2.In a bowl, Combine the soy sauce, lemon, salt, ground black pepper, garlic and mix well. Put the pork belly with the mixture and marinade the pork belly for at least 1-2 hours or if you can marinade it overnight, it's much better.
    3. You may use a george forman grill for indoor or grill it outside. 

    4. Grill the pork belly while basting the top part of the pork after flipping it over.

    5. Serve hot with spiced vinegar or toyomansi.

In and out burger... love it!

When you go visit US, I recommend for you to try this so yummy burgers from in and out burgers..

Since we got here in the US a few months ago and it was my first time to have tried the famous in and out burger. I'm so thrilled to taste it the first time and we kept coming back after that.  I know french fries are not so healthy food choice but in the world of fast food, maybe this is the healthiest french fries you can get since it's freshly cut and deep fried in their kitchen. I saw it in their kitchen. According to my researches before eating raw food is healthier but it confuses me when it comes to the fertilizer that they put in our fruits and vegetables. Best bet is use organic veggies and when available, use meat and eggs without antibiotics. I didn't see anything like meat without antibiotics in the Philippines. I have been trying to eat healthy foods and been eating organic veggies, rice and eggs in the Philippines. I'm so glad that in and out burgers have fresh onions, tomato, and lettuce. You may ask them to grill your onions if you want.

Whole grain wheat tortilla pizza

Whole grain wheat tortilla pizza (For vegetarian or meat lovers)

A healthy pizza to start with. There are a lot of pizza out there that I love but I just have to think of a way to eat pizza in a healthy way. I want to share with you this healthy pizza recipe. Try to buy a ungrated mozarella  since grated mozarella contains an ingredient to keep it grated and we want to try to put less chemicals in our body as much as we can. I make a veggie pizza for myself and pizza with some meat for my daughter and husbby

Ingredients: 
3 pcs. whole grain pizza
1 pc. green bell pepper (organic) or fresh
4 pcs.tomato or half cup of Ketchup (organic)
mozarella cheese, ungrated
1 whole medium onion
salt and pepper to taste 

Note: You may add any vegetable you like and it will taste good.

Optional: 
3 strips bacon, uncured or regular 
Summer sausage 





Procedure:


1. Prepare your whole grain tortilla on your baking dish. Suggestion is to use stainless steel but unavailable right now in our home (I hope I'll get 1 soon).

Cook your bacon  lightly with no water or oil. Just put it in the pan and cover it for a few minutes.

2. Steam or boil your tomatoes and add salt and pepper to taste. You may use ketchup instead. Spread the tomato mixture or ketchup to your tortilla using a spatula.

3. Start preheat up your oven for 350 degress.

4. Put onions, bell peppers, veggies, and other ingredients you want to have in your pizza.

5. Slice your mozarella very thin and place it on top of everything.

6. When your oven is heated, put your pizza in the oven.

Note: always use a cooking gloves to prevent burning.

7. Bake about 10-15 minutes or until mozarella is melted.

Chicken Adobo recipe

The All time favorite Filipino food loved by Filipinos and by most people all over the world. You may choose between chicken and pork, depending on your diet and Tastes. I will be putting the pork adobo recipe later but right now I will share with you my recipe for Chicken adobo. I'm like trying to be healthy pretty freak when it comes to food and so many things. As much as possible I used organic and natural recipes and products. Lately, I only use olive oil and seldom use Canola Oil for cooking. In selecting meat, I try to use no antibiotic and no preservative meats as much as I can.  I try to purchase them regularly. Each and one of us has its own style of cooking and this is mine. I love serving my family healthy foods. I'm using a circulon pan as of now which is made of titanium technology and some non-stick which my ever so  loving mother-in-law gave us, I'm so thankful for it but I hope I can get a new stainless steel pans which I have heard is healthier or the Salad master set which is made of titanium but it is way to expensive for me as of now. I don't know the difference of stainless steel and titanium cookware actually, just the technology I guess. I love this journey.



Chicken Adobo Recipe

6 cuts of chicken parts
7 cloves of garlic
2 medium size potato (optional), sliced in half
3 tbsp. soy sauce
6 tbsp. apple cider vinegar or regular vinegar
2 bay leaf
1 tbsp. peppercorn
salt to taste
pinch of brown sugar (optinal)
2 medium sized fresh tomatoes, sliced



Procedure:

1. Thaw and wash chicken parts fully. Combine the following on a bowl: the soy sauce, garlic, peppercorns. Place the chicken inside the bowl and roll it over the soy sauce mixture.

2. Put your pan on and turn on the stove on a medium heat and when the pan is all heated up, put it on slow cooking mode.

3. Put all the chicken along with soy sauce mixture inside the pan  using a slow cooking mode and cover the pan. Try not to open the pan frequently but make sure that you are using a slow cooking mode with a very minimal heat. The chicken will produce oil on its own and fry a little.

4. When the chicken is cooked already and no blood can be seen on the surface, add the vinegar and bay leaf. Add salt to taste. Pinch of brown sugar if desired. After it boils, add the potatoes. Cover the pan for a few minutes. When the potatoes is cooked, turn off your pan. Serve with sliced of fresh tomatoes with a pinch of salt and hot steamed rice.


Note: in using electrical stove, you may turn off your stove when you think your food is almost cooked to save electricity. That way we can save on our bill expenses and help our world as well. x

Thinking about where to go on weekends? Since we are just new in town, and we haven't seen Santa Cruz boardwalk with a lot of people on spring time, we have decided to go visit Boardwalk, Santa Cruz California. The last time we went there was like winter time and we are just by ourselves with the birds and seagulls. lol.  The weather today is great. Sunny and breezy and surrounded by a lot, a lot of people.

HGTV contest 2012

Wouldn't you want a new home for free? Or some cash. You can just do it just for fun and challenge. If you could just spare some time in entering contests. It would not hurt to try at all. I have been challenging myself to any contests, discounts, or perks ever since that sometimes I think this is one of my hobbies and I would like to share it to you as well. Honestly, it's not about the prize sometimes, but it excites me more of course. Who wouldn't be. But it's not really about the prize. That was so exciting because I love to travel and exploring other country's culture. I would travel around the world if I could. Sometimes to join a contest or perks involves a lot of hard work and fast thinking like joining in an AXN amazing race. I know it's nice to work hard for it maybe I just like the fun and excitement. I remember I got a free Asian Cruise to Singapore-Malaysia by just reaching a goal and being a fast thinker. It's a long story. I'm not saying I'm smart, just fast. I know more people are faster than me in a different way and maybe they are more productive but this is just me and this is just what I can do. I would always like to think where I can do something or help someone in any way and anywhere. I remember raising I think 6 million in a company where I used to work for before and ending up just getting 8K Philippine pesos as my commission and took me so long and more months to get it. No grudge about it. I know some people doesn't know how to appreciate you but you should just have to keep your heads up high and move forward with a positive attitude that someday, somehow you will be in the right place who deserves you and fit in.

Happy Easter time 2012: Gilroy Garden: A Review


We spent our Easter Sunday at Gilroy Gardens and theme park. It was fun especially for our kiddos. Their entrance was so nice and there are trees trimmed to be so inviting and gigantic. I just feel so bubbly having to spend our Easter at Gilroy Gardens. Can't imagine how happy and exciting kids feel about this theme park especially for those people who lives nearby.

Spring time is here. Imagine a nice sun with a little bit of breeze. I like it. Colorful flowers brightens up my day.









Oh I like this water falls and water with rocks. It's just so relaxing just by looking at them and hearing the water flows.




I can't deny how I just for some moment look at one spot and love the view. It's quiet and peaceful.








Train that goes around in almost all the area in the Gilroy Garden. If you want to see most of the rides and views on the end of the circle. You should try this ride. It's just right for touring around the area.






 Many amazing and unique tress are available for viewing at Gilroy Garden. They look so impossible but true indeed. I wonder how they manage to have those kinds of forms. Available in different areas.

Playgounds are available to take a break and watch your kids enjoy the slide but be careful. It's fun but kinda high for little kids.



I haven't tried the garlic ride. Since this keeps turning and turning in circles. I get dizzy after I tried the strawberry. Some people and kids may like it but I guess it's just not for me. lol. 







Many shops are open now and they have items that are awesome.


 



















View from rainbow ride which is very relaxing and has some spa music as well. Great! We'll try the Duck ride soon since it's always full and has a long line. We tried falling inline but it was too long. We'll try next time.



This roller coaster rideis the scariest of the rides of all available as of now, middle of April 2012. But it doesn't make turns. Just fast and fun.










Rock maze. My daughter enjoys getting lost in here. She had so much fun in it.




Fun booth prizes are available if you are up for the challenge to get a prize. You have to be really focus. As I watch people playing. I think it's not that hard to play. Play as low as USD 3.









I love this banana split ride. It gives me a tingling feeling and a tickle to my stomach. 








Saw a squirrel in front of me passing by.



This is snake ride is like a roller coaster but it's not that scary. Just right for me. We always like to sit in front.


Rides for toddlers are available too!




Icecream, cotton candy, hotdogs and some food stalls are available too! Since you are not allowed to bring food inside. Just have a taste with their available varieties. You may bring bottled water and food for babies.


Carousel.. All time favorite ride.





Many rides will be available on summer. Can't wait to visit again.











We spent like USD 34 each person and it is valid until summer season is over. I think around november if I'm not mistaken. Please correct me if I am wrong. I think their rates will go up on summer so purchasing your tickets now is so much worth it.
